Ingredients

  • 1 cup whole grain flour non-GMO
  • 1 cup oat flour or ground oats
  • 1/4 cup coconut oil melted
  • 1 cup peanut butter
  • 3/4 cup greek yogurt
  • 1/2 cup maple syrup
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp baking soda
  • 1/8 tsp cinnamon
  • 1/8 tsp salt
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 350 F. Line muffin tin with approximately 2 dozen liners.

  2. Mix flour, oat flour, and coconut oil. After the oven preheats, add remaining ingredients (except chocolate chips) and mix in a large bowl or food processor/blender. Do not overmix.

  3. Gently fold in chocolate chips. Pour batter into muffin tin cups, filling about 3/4 full.

  4. Add a few extra chocolate chips to the top of each muffin, if desired.

  5. Bake for 15-18 minutes, until the tops are just starting to turn golden brown.
