Why Eat More Beans?

Lately, I’ve been trying to eat more beans to increase my fiber intake. The humble bean is truly an underestimated food, with incredible amounts of protein and fiber and a host of nutrients like magnesium & B vitamins.

Another cool thing about beans is their ability to detox — they can actually pull excess hormones like estrogen and cortisol out of the body, improving hormone balance over time. The fat soluble fiber in beans helps improve bile flow, remove waste, and also feeds good gut bacteria (1).

Transforming Bland Beans into Irresistibly Delicious Beans

In my quest to eat more beans, I’ve been finding them a bit… shall we say… bland. If beans aren’t seasoned just right, they can be pretty lackluster. But even when seasoned well, beans can get a little boring when eaten daily.

That’s where this bean salad comes in. It’s the opposite of boring. It’s zesty, citrusy, spicy, onion-y, herby… all the best flavors are packed into it! It’s kind of similar to cowboy caviar, but a little different, and I much prefer eating a bowl of this with a spoon instead of dipping it with tortilla chips (although you could).

I also love how easy this salad is to make. The hardest part is dicing the veggies, and then just open a couple cans of beans and add the seasonings, and you’re all set! If you want to make this salad even healthier, you can soak and cook your own beans. I like making a huge batch and storing them in the freezer in small jars to use for recipes like this.

What is a dense bean salad?

Apparently dense bean salads were a viral TikTok trend in 2024, but I’m just now learning about them. Even though I’m late to the game, I forsee myself making these salads from here on out since they are so flavorful and nutrient dense!

A dense bean salad is a multi-bean salad with no leafy greens, with lots of crunchy veggies and a vinegar-based dressing. The salad marinates in the fridge and gets better throughout the week as flavors meld, which makes it a perfect meal prep salad!

This specific dense bean salad recipe is my new favorite, but there are so many flavor varieties you could try.

Southwest Dense Bean Salad Ingredients

There are so many yummy ingredients in this salad! Here’s why I love them and substitutions you could use instead:

  • Black & kidney beans – I love these varieties as my salad base, but you could use any type of bean you prefer. Other ideas include navy beans, pinto beans, chickpeas, etc.
  • Celery – I like to dice this super fine for best results.
  • Bell pepper – Any color is fine, but I used green for this recipe.
  • Red onion – You can use any onion variety, but I love the flavor of red onion.
  • Tomatoes – I love using small cherry tomatoes and halving or quartering them, but you could also chop some Roma or greenhouse tomatoes.
  • Garlic – Optional but adds more flavor.
  • Jalapeño or Serrano peppers – The spice is my favorite part! You can omit if you don’t like too much spice, or just adjust the amount to your preference.
  • Cilantro – Such a bright herby flavor! You could also use parsley if that’s what you have on hand.
  • Lemon & lime juice – I love the citrus flavor this adds! If you only have one, that’s fine.
  • Balsamic vinegar – This adds such a depth of flavor to the salad, but alternatively you can use red wine vinegar.
  • Extra virgin olive oil – A staple for every salad!
  • Salt & pepper – I love Celtic or Redmond salt and freshly ground pepper.

Southwest Bean Salad Tips & Storage

A few tips to perfect your bean salad!

  • Prep a large batch of this salad at the beginning of the week for healthy lunches all week long!
  • To improve the nutrition even more, soak and cook your own beans in large batches and freeze in jars to use anytime.
  • Rinse beans well before assembling the salad.
  • Be gentle as you toss the salad, so the beans don’t get mushy.
  • Dice all the veggies fine (except the tomatoes) – it makes for a nicer texture and flavor.
  • To make this a one-dish meal, you can add a meat or some crumbled cheese for extra protein.
  • Get creative with seasonings and herbs. You could try smoked paprika, taco seasoning, etc.
  • Store in an airtight container in the fridge for 4-5 days.

Ingredients

  • 1 can black beans (15 oz.) or homemade
  • 1 can kidney beans (15 oz.) or homemade
  • 2 celery stalks, diced
  • 1/2 bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, quartered
  • 2 jalapeño or serrano peppers, minced (optional)
  • 1 garlic cloved, minced (optional)
  • 1 cup cilantro, chopped
  • Juice of 1 lime (about 1 Tablespoon)
  • Juie of 1/2 lemon (about 1 Tablespoon)
  • 2 Tablespoons balsamic vinegar
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon sea salt (to taste)
  • Freshly ground black pepper

Instructions

  1. Rinse and drain beans and add to a large bowl. Dice all the veggies and add to bowl.
  2. Add the lemon & lime juice, balsamic vinegar, olive oil, salt, & pepper to taste.
  3. Mix everything together thoroughly.
  4. Flavor gets better as it marinates in the fridge. Stays fresh 4-5 days refrigerated in an airtight container.
